Time for this week’s dinner ideas! I tried a new recipe I’ve thought about making for years, an old favorite that’s great for making ahead, and my kid’s most requeted meal.

Our weekly menu will give you some good dinner ideas! Here’s a quick review of what I cooked this week for our family dinners.

MONDAY: COCONUT CHICKEN WITH BUTTERNUT SQUASH AND ASPARAGUS: I’m loosely doing the Blood Sugar Reset from my friend Brigid, and this recipe was included in this week’s menu. My boys were dubious about this one, but they ended up loving it! Her exact recipe isn’t available online (only through the paid program) but the recipe I linked is similar!

TUESDAY: HAM HASH WITH EGG AND POTATO. We had some leftover ham from Easter, so I made this yummy dinner that was quick and easy. I served with a fried egg on top and everyone was happy!

WEDNESDAY: BLACKENED SALMON. My kids love salmon more than basically any other dinner, and it’s so easy to make! I served with roasted potatoes, fruit, and Texas Toast.

THURSDAY: MEXICAN STUFFED PEPPERS. I’ve thought about making stuffed peppers for literally years, and never made them cause I didn’t think my family would like them. But turns out they loved them! I will definitely be making them again.

FRIDAY: BBQ CHICKEN PIZZA. Everyone loves pizza night at our house! I make it using grilled chicken, BBQ sauce, fresh jalapeños, and frozen corn. Trust me. We serve with a drizzle of BBQ sauce and crispy fried onions. Delicious!

SATURDAY: DATE NIGHT

SUNDAY: LASAGNA (MOM GONE). I’m traveling for the next few days for work, so I made a lasagna in advance so the family could eat something while I’m gone. This is our favorite lasagna recipe!

what I cooked for dinner this week

Time for this week’s dinner ideas!  I made a super easy but delicious taco recipe, we made our tried and true pizza, and had a few other great meals this week.

 

Our weekly menu will give you some good dinner ideas! Here’s a quick review of what I cooked this week for our family dinners.

I was traveling at the beginning of the week, so I didn’t cook dinner until Wednesday, but I got home, I made a few great recipes!

 

WEDNESDAY: CHIPOTLE CHICKEN TACOS. This was a super quick and very yummy weekday dinner. The chicken took about 10 minutes to cook, and then I just chopped it up, added it to crispy cheese tortillas, and served with avocado and fire roasted corn salsa. Yum!

THURSDAY: RIBEYE STEAK. Thursday was my husband’s birthday, and he requested ribeye steaks. So I made those and served with fresh raspberries and green beans.

FRIDAY: BBQ CHICKEN PIZZA. Everyone loves pizza night at our house! I make it using grilled chicken, BBQ sauce, fresh jalapeños, and frozen corn. Trust me. We serve with a drizzle of BBQ sauce and crispy fried onions. Delicious!

SATURDAY: OUT TO EAT

SUNDAY: DINNER AT GRAMPA’S HOUSE. My father in law graciously invited us over for dinner for Mother’s Day so I didn’t have to cook!
